When it comes to chocolate I love the CACAO powder that you can add to just about to everything without that guilty feeling. Cacao is the purest form of chocolate you can consume, which means it is raw and much less processed than cocoa powder or chocolate bars. Cacao contains high amounts of antioxidants and vitamins so treat yourself everyday I say.
My Mint Cacao Balls are a great healthy snack either for work or for when you are traveling as they won't melt. They are quick and easy to make and only need a few ingredients.
What you'll need:
1 cup of Almond Meal
1 cup of Dates-pitted
Dash of Vanilla essence
Dash of Peppermint
1. Mix it all together in a blender, I used a Sunbeam food processor with the S blade
2. Add in about 6 tablespoons of water until the mixture slightly wet and sticky
3. Roll them into small balls and dip them into coconut.
4. If they make it to the refrigerator cool for 30 mins.
Recipe makes 10-12 balls.
